The Farmstead Cheese industry in New York is experiencing a new revival. In order to develop a regional farmstead cheese industry, Shannon has been working with area farmers and artisans interested in developing a cheese enterprise on their farm. She has hosted cheese workshops with Peter Dixon, Peter Anglade, Rona Sullivan and Donna Doel. She also does periodic cheese workshops herself on the farm.
In 2006 she has also assisted Renate Nollen of Dutch Girl Cheese and Timothy Powers of Poplar Hedge Farm develop cheeses. They hope to produce cheeses on their own pretty soon.
We offer cheese making classes in late spring and early fall. They are geared towards the beginner. You will learn how to make them in the kitchen as well as in the "cheese vat". Occasionally we invite cheese makers to do workshops on the farm. Past workshops have included Peter Dixon, Rona Sullivan, Donna Doel and co-hosting of Patrick Anglade.
We also talk about cheese and do demonstrations for various groups. Other topics may also include heritage breeds in cheese making, grass based farming, and doing a value-added enterprise on your farm.
