Heamour Farm is the Farmstead Cheese business. This is an enterprise that was started in 2003 by Shannon Nichols. The idea was to stabilize the milk prices paid to the dairy and provide an on-farm salary to Shannon. The only criterion was that Shannon could make a great cheese.

After test marketing fresh cheeses, both found that chasing fresh cheeses was too much like selling bottled milk. Central New York is not Massachusetts. When the herd started to dry off in the fall of 2005, Shannon started to work on a raw aged farmstead cheeses. The first one she worked on was a traditional Farmstead Gouda. It turned out to taste great, and “Honey Gouda” was marketed in 2006. It is selling very well.

She has also been experimenting with traditional English Farmhouse cheeses and plans on marketing two new varieties in 2007.
